there's a lot of trucks there, so there are plenty good hiding spots outside. Same thing at night, it's dark and there's no parking lot lights that are on. If doing it with truckers isn't your thing, there's a truck sale parking lot right beside it. One thing though - Vesta is located right at Steeles and Dixie. This is a very very busy intersection and your chances of being interrogated by the cops is high, especially if you are around the back at 1am. use your head and discretion here.
